Gluten Free Chocolate Chia Pudding

March 5, 2019

This recipe was served during the Declutter Your Mind & Life Workshop we held at my home. And many of the attendees have requested for it’s recipe together with the Quinoa Roasted Veggies & Nuts Salad, and I’m always happy to share! As promised to my favorite food blogger, Chichajo of 80Breakfasts blog, here is the super easy recipe!

Kilig (overjoyed) to be featured on food blogger Chichajo’s IG!

Desserts have a reputation for being dangerously sweet and unhealthy. There are a lot of super sweet stuff out there that is mostly sugar and artificial flavorings, which are created by companies to get us addicted. So imagine my surprise when my pregnant friend Imelda in Berlin served me this guilt-free treat. Not only is there no processed sugar, but it’s also gluten free! So now you can hit the spot on your chocolate cravings without guilt with this addictive Chocolate Chia Pudding treat!

Healthy Chia Seeds

Chia seeds are everything a healthy relationship should be – high in fiber, protein, Omega-3s AND it lowers the risk of heart disease! (See here: 11 Proven Health Benefits Of Chia Seeds) Pair this up with chocolate and bananas and you’ve got yourself a love that lasts a lifetime. So, get out your cooking materials and we’ll show you just how you can make this super easy dessert part of your minimaluxelifestyle!

INGREDIENTS

  • 1/2 Cup Almond Milk
  • 1/3 Cup Chia Seeds
  • 1/4 Cup Cacao Powder (the best you can afford, check out Healthy Options!)
  • 2-5 Tablespoons Honey
  • 1/4 Teaspoon Sea salt (optional)
  • Banana sliced

HOW-TO

  • Mix Cocoa Powder and Chia seeds in a big bowl
  • Add Almond Milk, then mix in honey and salt (optional)
  • Cover bowl and chill in the refrigerator overnight. Be sure to have space in your bowl, because the seeds will expand.
  • Serve with Banana slices and (optional) garnish with mint leaves

Chocolate has always been the classic favorite; the sweet that everyone can’t resist. Now that you’ve got a recipe for it that turns sinful chocolate into a healthily heavenly experience, you’ve got no choice but to add this to your arsenal of healthy eats! That being said, who says chocolate can’t be good for you?

I can’t believe how delicious this choco chia pudding is! Even the quinoa (salad) was deceptively delicious! What a wonderful first time to taste both! Yum!

Thanks in advance for the reply!

Hello E! You can make replacements of course, but I don’t know if it will taste the same. The healthiest version is the one that’s listed here since we use organic almond milk which is hormone free, but feel free to experiment. The cocoa powder I use in unsweetened, hence the honey. If you try replacing the ingredients on your first try, I would still recommend in the future trying it with what’s listed, because it’s so surprising how delicious it is with “healthy” ingredients. I’m not normally a fan of almond milk. But this is really delicious!
