No-bake Blueberry Cheesecake

I’ve meant to use my precious stash of Graham crackers for a while now but I’ve found the thought of making cheesecake daunting. Until I found this No-bake Blueberry Cheesecake recipe from My Mom Friday. It seemed simple enough so I busted out the Graham Crackers and here’s how it turned out!

So simple yet so yummy! The Graham crust is the key! TD super loves it (I have to stop him from having two slices in one sitting – LOL!)

Notes:

  • I used 1/4 tbsp Agar instead of 1 tbsp (1 sachet) of Knox coz I don’t know where to buy Knox in Jakarta. I bought Agar powder from Grandlucky Superstore SCBD, Jakarta.
  • I used Graham cracker that were brought by a friend from the Philippines. I can’t find Graham crackers in Jakarta.
  • I used a round pie baking dish
  • I did NOT add 1 teaspoon lemon juice and grated rind for the cheesecake filling
  • I love the idea of only placing the Comstock blueberry pie filling right before you serve it! (This is a picture of the my cheesecake before I put a dollop of the blueberry filling)

What I’ll do next time:

I will used 1/2 tbsp Agar powder, because I find the filling to soft. If using Agar powder, you have to use less than the amount you would use for Knox or it will get too hard and chewy.

Thanks so much for sharing this family recipe My Mom Friday! I’m planning to make it again for tea with the ladies soon and it’s definitely going to be one of our go to recipes for dessert! I love simple yet SO delicious recipes – and this is definitely one!

      Hi Mom-Friday! It was my pleasure! =) Because I didn’t place enough Agar and it was a bit soft in the ref, I placed it in the freezer for storage and it was brilliant especially after 2 days in the freezer! Thanks again! I will let you know how it goes for tea!

      Hi Kiki, they have a lot of stock of different Comstock filling right now in Grand Lucky Sudirman (blueberry, strawberry, apple, peach, etc.) so hurry over there and go for it! Sometimes they get out of stock.

    Hi! I’ve been looking around for no-bake cheesecake recipes lately- i found MomFriday’s then I found yours. I plan too on substituting the agar agar powder for the gelatin, so how much do you think is necessary for the best consistency of the filling?

    Would 1/2 tbsp be enough? Thank you so much!

      Hi Kery, glad you found my blog. You will enjoy this easy recipe for sure. Though I used only 1/4 tbsp of agar agar, I think I would increase it to 1/2 next time so it’s more firm. With only 1/4 tbsp the cake I needed to freeze the cake instead of just refrigeration. It would soften fast when it was brought to room temp. So yeah I would definitely try 1/2 tbsp instead.

      I did a little research and this is what I found:

      • Substitute powdered agar-agar for gelatin using equal amounts.
      • 1 Tbsp. of agar-agar flakes is equal to 1 tsp. of agar-agar powder.
      • Set 2 cups of liquid using 2 tsp. of agar-agar powder, 2 Tbsp. of agar-agar flakes, or one bar.

    Hi, may i know if the agar agar needs to be dissolved in boiling water before adding it to cream cheese? Or i can just add the agar agar powder straight to the cream cheese?

      Dear Kristah, I followed My Mom Friday’s recipe, substituted the gelatine powder with agar agar, then combined it directly with milk:

      “In a small sauce pan, combine milk and gelatine powder.”
