I found this super easy flourless cookie recipe on Pinterest. The first time I tried it was so yummy but super sweet so I figured out a way to make it with less sugar! A friend requested for the recipe so here I am posting it! It’s so easy you can whip it up for guests 30 minutes before they arrive!

These ooey, gooey chocolate cookies are easy and addictive! Be warned!!
Ingredients
- 2 cups Tropicana Slim Low Calorie Cana Sugar or 2 cups regular powdered sugar (from Grand Lucky Superstore) originally it is 3 cups regular powdered sugar, but I found it too sweet and with 2 cups it gives it a dark chocolate taste. * You can also try sugar-free substitutes to make the recipe sugar free
- 2/3 cup unsweetened Dutch-processed cocoa powder
- 1/4 tsp sea salt
- 3 large egg whites, at room temperature
- 1 Tbsp pure vanilla extract
- 2 cups dark couverture sugar free chocolate (from Indoguna Meat Shop) originally this is semi-sweet chocolate chips
Instructions
- Preheat oven to 350.
- In a large bowl, mix together powdered sugar, cocoa powder and sea salt.
- Add in vanilla.
- Whisk in egg whites until just moistened.
- Add in chocolate chips.
- Spoon thick fudgy batter onto cookie sheets in small mounds. Chill for 5 or so minutes to keep them from spreading when they bake.
- Bake for 14 minutes or until tops are glossy and lightly cracked.
Notes
- These cookies are considered “gluten-free” if using gluten free chocolate chips.
- Make sure to space the cookies far apart or they will meld into one big cookie or brownie. I make this in several batches just to make sure that the cookies are spaced far apart
- Also make sure to follow the 5 mins chilling time
- The reason my cookies don’t look shiny and cracked because this batch I added the Vanilla last. It’s a boo-boo but it still tasted amazing and was a hit with our guests and with TD! But if you do it right, it will have that shiny cracked look. No matter because this recipe is very forgiving! And people love it anyway!
This recipe is perfect with coffee or tea.

Hi Ramel, Glad you liked the taste! The first time I made them, they came out like brownies for sure. Now I learned that 1) you really need to space them far apart, and 2) you need to do the chilling time so that it doesn’t spread. I think the cupcake paper cups are a great idea to keep things simple! I love it and I think I will try your idea next time! Thanks for the comment and an awesome idea to try!
