How to make a healthy spread with roasted garlic

I got requests for this recipe when I posted a photo on my Instagram so here I am posting it! This is a great healthy spread option. You can use it instead of butter for bread. I first discovered this at Chelsea Restaurant in Serendra Highstreet and TD really enjoys it when I make it. The best thing about it is how simple and healthy it is!

Roasted Garlic Spread Ingredients

  • A head of Garlic (or as many as you need if you are hosting a dinner)
  • Sea salt – I like to use big chunks of sea salt like this Italian brand so it doesn’t disappear
  • Balsamic Vinegar
  • Olive Oil

How to Make Roasted Garlic Spread

  1. Peel the outer layers to expose the cloves
  2. Chope of the tops of the cloves to expose the garlic inside
  3. Place inside a foil
  4. Drizzle with balsamic vinegar and oil
  5. Generously sprinkle with salt (don’t use the mill or grinder, just place as is)
  6. Wrap up with foil
  7. Place inside a toaster oven, making sure that none of the foil touches the top and bottom heating elements (this is for safety reasons)
  8. Remove after about 30 minutes or when the garlic is soft when pressed with a spoon
  9. Unwrap carefully once the foil cools down and place in small bowls for easy handling. The garlic should be easy to remove with a knife. Baked Garlic Spread-001
  10. Spread on warm toasted bread. Drizzle a bit more extra virgin olive oil on top, before having a bite!

Drizzle with extra virgin olive oil and balsamic and serve with a nice loaf bread and eat immediately. Great as an appetizer or a side dish, instead of the usual olive oil & balsamic dip. Makes for a fabulous (but easy) appetizer for parties.

Diplo Tip:

When making several pieces place the garlic heads inside muffin/cupcake tins like this recipe. And you can either cover peeled clothes with extra virgin olive oil or puree and store.

    Incidentally, I was craving for roasted garlic spread last Saturday, which I had at Mad About Garlic and the bilateral Ambassador’s residence in JKT eons ago. Immediately after our help baked the garlic, we had an emergency last Saturday– an actual fire in the kitchen because of a faulty gas regulator! You can just imagine the horror we went through! I really thought the unit and everything in it would turn to ashes. It was a miracle the gas tank didn’t explode and the fire was put out. I’m switching to electric/conduction stove and oven. Haay! My craving for roasted garlic almost ended into a disaster. Thank God it didn’t.

    Learned from TD you toured Poland last holiday.

      OMG V! I was just about to message you to ask how you are? B just told me that J messaged her on FB. She got burned daw? I hope it wasn’t too bad!? That is such a scary experience and a nightmare for anyone at home. I am so glad that the tank didn’t burst and it didn’t burn down your place!! Nakakatakot talaga!

      We are using electric here and in the Philippines as well. It does feel much safer. Bahala na the electric bill diba?? I really enjoy our ceramic top stove right now, even if there is a tendency to get scratched. It doesn’t really feel hot and you don’t worry so much about getting burned and heating up cookware handles etc. I highly recommend it.

      Next time, just use a toaster oven nalang! Just make sure the foil doesn’t touch the heating element! I hope you still get to enjoy the roasted garlic! We miss you and J too!

        Thanks A, it was indeed a traumatic experience for me. I had to bring her (Jo) to the hospital that same night although thankfully she just got some bruises because of the extreme heat in the kitchen.

It was @diplobaby’s idea to add googly eyes to the bats. So we did it together! I love the one eyed bats 🦇 and I love it when we decorate together! Definitely one for the core memory banks! 👻🎃🤍

I was tickled pink coz people would pass by and take pics, stare or even tell me good job. 🎃 Halloween is really my favorite holiday!

VILLAGE PUMPKIN CARVING EVENT Every year I look f VILLAGE PUMPKIN CARVING EVENT

Every year I look forward to this event for families in our village. We also invite our friends outside the village coz it’s so much fun for families. Parents and kids can come in costume. It’s done beside a fabulous park so kids can run around and play.

The pumpkins 🎃 might be overpriced (the bigger ones went from chf 18 last year to chf 23 this year) BUT it includes the free use of NIFTY CARVING TOOLS, waste disposal, clean up & cute decor that the organizers have provided.

We draw together. TD removes the guts. Then @diplobaby & i do the carving together with our son and it’s a controlled way of showing him how to use the tools in a safe way. Which is something I appreciate in Europe.

One year we tried pumpkin 🎃 carving at home and clean up was a totally nightmare. Never doing it again!

Then when kids and parents are are hungry we can buy food & drinks. 

We go home with a carved pumpkin 🎃 & don’t have to do the clean up. The pumpkin guts are also turned into soup by the organizers.

It’s also a good way for parents to unwind, catch up while the kids play in the playground. We usually see our neighbors here too.

It’s a win win for everyone & it reduces unused waste. I love it so much!

We never did pumpkins before coz it would rot@so fast in Asia. But i  the past 3 seasons of doing this I’ve learned so many tips and tricks for pumpkin 🎃 carving - especially how to prevent molds and insects. Let me know if you want me to do a separate post on that!

Hi guys it’s been a while since I’ve posted ab Hi guys it’s been a while since I’ve posted about our #DiploHome.

This is our BALCONY/TRASH SEGREGATION AREA.

Because we use it to entertain in SPRING & AUTUMN (too hot & too many insects in summer) I made sure that the trash segregation remains AESTHETIC by using white @ikeaschweiz SEGREGATION BINS.

So far SWITZERLAND TRASH SEGREGATION in our experience is even more complex than GERMANY but it has led to at least 50% RECYCLING rate which is pretty good, even though Germany still has the highest rate of recycling 66%

Definitely a highlight of our Barcelona trip!
This place is a must for any football fan and Messi fan! It is also home to many of the women footballers who won the @fifawomensworldcup 2023 and a great training ground for future football stars.
