We had some pancetta that needed cooking so I was looking for a recipe on Jamie Oliver’s 15 Minute Meals Recipe Book. He has an amazing recipe for an exotic pancake with maple glazed pancetta, but I didn’t have all the ingredients so I decided to go with the Old Fashioned Oatmeal Pancake recipe I already had, and top it with maple-glazed pancetta! The prospect excited me (we usually have Pukkolla for breakfast almost everyday) ! So I soaked the oatmeal in milk overnight. Super simple recipe after the jump!
The original recipe is called Civil War Pancakes from The Prairie Cottage.
Civil War Pancakes2 cups buttermilk1-1/2 cups quick oatmeal1 cup flour1 teaspoon baking soda1 teaspoon baking powder1 teaspoon salt2 eggs1/4 cup vegetable oil2 tablespoons sugarAdditional milk to thin batter, as neededMix buttermilk and oatmeal in mixer bowl. Allow to soak at least 4 hours or overnight. In the morning add dry ingredients, eggs and oil. Mix well and thin with additional milk, if needed. Enjoy!This recipe can be doubled or tripled. Flash freeze any extra pancakes on a cookie sheet. Once frozen, remove and store in a zip bag or plastic container in your freezer. Reheat in microwave, oven or toaster oven. This freezer method works for any kind of pancake or waffle and makes a fabulous quick breakfast!
Maple-glazed Pancetta
- Turn the heat on medium-low & grease the pan (very little oil because pancetta has a lot of oil)
- When the pan was hot enough I dumped the pancetta in. (I had to lower the heat to the minimum possible and I still burnt it a little.)
- Once one side was golden, I flipped it.
- Once the pancetta is done and golden, pour the little maple syrup and glazed for 20 seconds.
- Turn of heat and serve on top of the pancakes
Though a bit burnt, it still tasted amazing!
Our favorite syrup for pancakes is Tropicana Slim’s Gula Jawa (it’s a sugar-free brown sugar substitute for diabetics). I don’t really recommend sugar substitutes but this one is really yummy and since we don’t have pancakes all the time, I think it’s okay to have as an occasional treat.
Civil War Pancakes + Maple Glazed Pancetta + Tropicana Slip Gula Jawa = TASTY BREAKFAST TREAT!
This breakfast was so yummy that TD wiped it out in a matter of minutes, without even talking! LOL!
